What can I say, it was a sandwich kind of day around here! First the egg-less salad sammies for lunch, and now the panini for dinner. And, yet again, my second meal consisting of white bread, both in the same day. Gasp!! This time it was an organic french bread loaf from Whole Foods. It was good....and so worth the overload of bad carbs.
Tonight I changed up our usual panini and made one based on the Dalai Mama's panini. We usually put mozzarella on ours, and since I am trying to go vegan, I thought the Dalai Mama's version sounded like it would be better without cheese than my own version. So, for the panini, I spread one slice of bread with Nayonaise, topped it with halved artichoke hearts, next a layer of roasted red pepper. Then some sliced roma tomato, some baby spinach and a drizzle of olive oil. Finally I seasoned the whole thing with some salt and pepper and put it on the press.
This was delicious. I really really wanted to eat a second one, but knew better than to eat 3 white bread sandwiches in one day!
Along with the sammies we had some sea salt and pepper Kettle Chips. Whole Foods was having a sale on organic broccoli today, so I bought several heads. I steamed some of that as well. And, to finish it off we had some pink Cara Cara oranges. I couldn't find any of the delicious blood oranges we've had for the past 2 weeks, so I opted for Cara Cara's since I've never had them before. They aren't as good as the blood oranges, but they are good.

Ohhhh, your panini looks so good! White bread is so dangerous. Really. If I buy it, I'm likely to just sit down and eat the whole thing. I'm making white bread french toast this evening. LOL So far, I've managed not to go in and tear a chunk off and eat it. I'm afraid there would be nothing left for the french toast!
We almost never buy white bread, unless it's a french loaf for making garlic bread. But I had a major white bread craving at the store yesterday and not only ended up with this french loaf, but also a whole loaf of pre-sliced white sandwich bread. I'm trying to eat it sparingly, but I'm sure it'll be gone a lot quicker than the whole wheat loaves I generally buy!!!
We have a really good bakery here in town where I'll occasionally buy cibatta, sourdough or a baguette. I've got no problem eating that type of white bread once and a while. I mean, people in Europe do it every day, and they're generally much healthier than we Americans are. When I was pregnant, I went through a phase where I could pretty much only eat pb&j on white sandwich bread. LOL
I do all of my baking with either whole wheat or white whole wheat flour, and we only eat whole wheat pasta....so I figure a little white bread here, a little white rice there, it's not gonna kill us, ya know? That's the beauty of eating well, you can eat not so well, without the guilt!!

Mmmm. White bread! I am like you, I don't eat the white bread normally, only on occaision, and then it tastes so yummy! (But not the stick to your mouth Wonder bread kind, the good bakery kind.)
I wish my wife would buy more white bread:-(
