Stawberry Shortcakes

This has been our first week of school, and I've been trying to make most of the things that are Mairin's favorites, along with a few special treats for her. Yesterday she was greeted off the bus with warm Chocolate Chip Cookies and a glass of vanilla soy milk. This morning before she left for school she was telling me how much she loved strawberry shortcake ("you know, the desserts mommy, not the girl"). Luckily, Vegan Dad had just posted a recipe for shortcake, so I knew exactly what my special treat today would be. We actually finished up our chocolate chip cookies from yesterday after school and had these delicious shortcakes after our dinner. The cake was just right, and served with Temptation Vanilla Ice Cream, it was just like the strawberry shortcakes from childhood.

For dinner we've been having meals that I know Mairin will eat.....I want her to be well fed for the first week of school, ya know. So we've had "Giardino" Burgers, spaghetti, and tonight a tofu scramble. I've made a similar curried tofu scramble that I blogged about before. This scramble had green onions, carrots, garlic and spinach scrambled with the tofu and seasoned with salt, pepper and curry powder. The kids actually like this, which has surprised me twice now!!. I served them with some potato cakes that I made from mashed potatoes that were leftover from earlier in the week.

The strawberry shortcake looks heavenly. I don't even know if I can find worthy strawberries here this late.

School already? Wow! We've still got another week and a half. Is Mairin in kindergarten this year?

Yes, school already....isn't it crazy. There is actually some legislation trying to push school start dates later in August, as there aren't too many people happy about early August start dates.

Mairin is in kindergarten this year. It's full day, and it's been a big adjustment for her. I think it's fair to say she's totally wiped out and it's only Thursday. I wish they eased the kindergarteners in a bit, by making their week shorter.

About the strawberries.....I can usually find decent strawberries at WFM most of the year. Only they are shipped thousands of miles and cost a small fortune, so I don't generally buy them. This was a special occassion!!

Last year, when Annelies started k-garten, it started at 7:50 a.m. She had to be at the bus stop by 7:15! (She insisted on riding the bus.) It was early for all of us, but it sure did get the kids going to bed early. By 7:30 or 8 p.m. in the late fall/winter. Sleek and I were used to the kids staying up until 10 or so. All of a sudden we had a few HOURS each night to hang out. We didn't know what to do with ourselves! LOL This year they've changed the start time to 8:40. Much more reasonable.
